This recipe is too good not to share!
I recently subscribed to
Southern Living Magazine and boy am I glad that I did! They have the most delicious recipes and it's a break from the normal, traditional Northeast cookin' that I'm used to.
This past month's cover featured the most eye-appealing pot roast I've ever seen...so I had to try it for myself.
(Tell me this isn't mouth-watering)
I headed out to the market and gathered up all the ingredients needed for this beer-braised pot roast recipe. Just the ingredients alone are gorgeous right?
You can use any type of beer you like, but I felt that the Guinness stout would compliment the coffee rub (and it did!)
The first step is to rub the entire pot roast in coffee grounds and then pan sear it...
Next, simply add it to a crock pot along with vegetables, beer and beef stock and then cook on low for 8-10 hours...
The recipe calls for you to serve it with grits, and it was a fun twist on a traditional mashed potato side...
And of course --- don't forget to save a Guinness or two for yourself to have along side this delicious dish!
