A Gluten-Free/Paleo Dessert
Looking for a delicious (and nutritious) dessert recipe? Look no further - these chocolate zucchini muffins are delectable! I've made LOTS of zucchini breads, muffins and cakes in my day. But I wanted to try something different this time and it needed to be gluten free for a family member. Plus, my husband and I have been trying to follow more of a Paleo-style diet because of the great results it has provided in the past.

Ingredients
1 cup almond butter
2 eggs
1/4 cup maple syrup
1 tsp vanilla extract
Pinch of salt
2 tbsp coconut flour
1-2 tbsp cocoa powder
1 tsp apple cider vinegar
1/2 tsp baking soda
1 cup shredded zucchini
1-2 tbsp paleo approved dark chocolate, chopped into small pieces
Instructions
Preheat the oven to 375 degrees F. Line a muffin tin with cups. Squeeze any excess moisture out of the shredded zucchini. In a medium bowl, mix together the almond butter, eggs, syrup, vanilla, and salt. Stir in the coconut flour and cocoa powder. Add the vinegar and baking soda and stir to combine. Fold in the shredded zucchini.
Add about 1/4 cup of batter into each muffin cup. Sprinkle with the dark chocolate pieces. Lower the oven heat to 350 degrees F. Bake for 20-25 minutes, or until a toothpick comes out clean. Serve warm.

My daughter wanted to buy this super cute Halloween cupcake kit from AC Moore the other day. I was hesitant to make cupcakes as they usually get wasted and no one eats them. So these muffins made the perfect decorating opportunity! I'm thinking that these would be perfect this week for any festive Halloween parties or events.

Any my daughter had so much fun decorating them and helping out in the kitchen...
But clearly the best part of making these muffins was eating them!!!
